Last night I grilled four large split bone-in chicken breasts for dinner. We only used two so I decided to use the leftovers to make this quick and easy BBQ chicken pizza. This recipe would also work great with store-bought rotisserie chicken. A quick stop at the store, 25 minutes, and you have a great dinner the kids will love. The only prep work is slicing the green onion and shredding the chicken. This would also make a great appetizer.
Ingredients:
1 loaf of garlic parmesan focaccia bread (I bought mine at Kroger’s)
2 cups BBQ chicken, cooked (you can also use rotisserie chicken)
1 cups light Alfredo sauce (I use Bertolli Brand)
1 cup shredded mozzarella cheese
1/2 cup Sweet Baby Rays BBQ sauce
2 green onions sliced (Green parts only)
Makes 12 slices
Directions:
1. Preheat oven to 400 degrees F.
2. Place focaccia on a baking sheet
3. Top focaccia bread with shredded BBQ chicken
4. Cover chicken with Alfredo Sauce
5. Top with cheese, BBQ sauce and green onion
6. Bake in hot oven for 15 minutes
Serve with a side salad or fruit
