I have been known to spoil my kids with food. They all have exceptional palates. Many mornings, before school, I will fix them a hot breakfast. I also like to make a nice breakfast, on the weekends, when they have a sleepover with friends.
Everyone needs a basic go to French toast recipe. I add a little more vanilla and cinnamon than most recipes. If I’m out of cinnamon sometimes I will substitute pumpkin spice. I like to use Texas toast in my recipe because the thicker slice bread holds together better. Cook it on a slightly lower temperature and a little longer to firm up the bread. This keeps the toast from soggy in the middle.
(TIP: Be sure to butter your griddle or pan before each batch.)
I fix a whole loaf of bread when I make french toast. It freezes well and can be reheated in the toaster straight from the freezer. (To make a smaller quantity just cut the recipe in 1/3rds. See bottom of post for recipe.)
This recipes makes 15 slices of French Toast.
Ingredients:
1 loaf Texas toast, about 15 slices. Our local Kroger keeps this on the shelves.
6 eggs beaten.
2 cups milk. I use 1% low-fat milk.
1 tsp. cinnamon. (optional) Sometimes I will also use a cinnamon sugar mix I keep on hand to make cinnamon toast. I keep this in a shaker. See recipe below.
3 tsp. vanilla extract (optional). Buy a good quality pure vanilla extract. I use Rodelle.
1/2 tsp. salt.
Butter to grease the pan or griddle.
Directions:
Beat eggs in large flat bowl.
Stir in milk, cinnamon, vanilla and salt.
Heat griddle or pan over medium heat. Grease with butter.
Dip slices of bread in egg/milk mixture. Soak both sides. Drain off excess. Do not soak until bread falls apart.
Cook slices for approximately 2-3 minutes per side, until golden brown.
Keep warm on a baking pan in preheated 200° oven.
Serve with powdered sugar, syrup and fruit.

Cinnamon-Sugar Blend
1/4 cup granulated white sugar
1 tablespoon cinnamon
Combine the sugar and cinnamon in a small bowl, using a fork or small whisk to thoroughly blend the two together. Store in an air-tight container.
Recipe for 6 pieces of toast:
6 slices of bread
