Blueberry Sour Cream Skillet Bread with Streusel Topping

Today, July 11th, is National Blueberry Muffin Day. Okay, so this is not a blueberry muffin, it is something better. And I mean way better! My skillet bread uses a simple batter that could be used for muffins, but why when you can make skillet bread. The cast iron skillet allows the bread to cook evenly and gives a nice crust to the outsides of the bread.

The sour cream and lemon juice add a nice tang to the sweet and tartness of the blueberries. You will want to definitely make this for breakfast tomorrow. I should have made two because my first bread was gone in a couple of hours. I had to hide a piece for my wife to have when she got home. Darn kids wouldn’t stop eating it. :))

Cheesy Cauliflower Casserole with Ground Turkey and Potatoes

I’m always interested in creating new recipes using ground turkey, especially casseroles, that are easy to make and incorporate vegetables. This recipe is simple, easy to put together and taste great. Your kids will not even notice the cauliflower and a its great way to incorporate vegetables into their diet.

To simplify the recipe I used Simply Potatoes brand Diced Potatoes with Onions.  For the ground turkey I usually buy the 4 pack of ground turkey, by Butterball, from Costco. Packs average around a 1.5 pounds each.

To cut baking time in half, I recommend microwaving the potatoes for three minutes.

To make ahead, brown the ground turkey, boil the cauliflower and assemble the rest of the ingredients. Cover and place in refrigerator until ready to cook. As you preheat the oven, remove the casserole from the fridge and allow to come to room temperature. Cook until top is slightly brown and edges are bubbling.

Orecchette Pasta with Chicken Meatballs in a Mushroom Marsala Sauce

When I want to decompress, or relax; I cook. Sometimes I drink and cook, but might do my best cooking with this combination. A couple of days ago I picked a box of DeCecco brand orecchiette (little ears) pasta from Jungle Jim’s. Jungle Jim’s is our local foodie market and is one of the best around. I highly recommend looking it up or stopping by for some great food and ideas.

I decided to use the orecchiette with a mushroom sauce using what I had at the house with a quick stop at Kroger’s.

Here is what I came up with and the family loved it! I think you will also.

This dish sounds more difficult than it really is. This dish is fancy enough for a dinner party but also easy enough for a weeknight meal or Sunday dinner.
