I’m always interested in creating new recipes using ground turkey, especially casseroles, that are easy to make and incorporate vegetables. This recipe is simple, easy to put together and taste great. Your kids will not even notice the cauliflower and a its great way to incorporate vegetables into their diet.

To simplify the recipe I used Simply Potatoes brand Diced Potatoes with Onions. For the ground turkey I usually buy the 4 pack of ground turkey, by Butterball, from Costco. Packs average around a 1.5 pounds each.
To cut baking time in half, I recommend microwaving the potatoes for three minutes.

To make ahead, brown the ground turkey, boil the cauliflower and assemble the rest of the ingredients. Cover and place in refrigerator until ready to cook. As you preheat the oven, remove the casserole from the fridge and allow to come to room temperature. Cook until top is slightly brown and edges are bubbling.
