Potato Leek Soup

www.dadwhats4dinner.comToday is a good day for soup here in the Midwest. The temps will be falling below zero before the end of the day with wind chills 15° to 25° below zero. The wind is howling outside my office window and the snow is blowing sideways. I guess I shouldn’t complain, our winter has been relatively mild compared to the New England states. They are bracing for their fourth blizzard in a row.

www.dadwhats4dinner.comI’ve had a bag russet potatoes that were begging to be made into soup. I love soup especially on a cold blustery day. I picked up a bunch of leeks earlier in the week, so a potato leek soup was my soup of choice this weekend.

Roasted Veggie Hash

This a great side dish that my kids love. The prep is made easy if you have dice and slice chopper box. This helps keep the veggies the same size for even roasting. Goes great with my smoked pork shoulder.

Ingredients:

1/2 cup yellow squash diced ( 1 small )
1/2 cup zucchini diced ( 1 small )
1 cup carrots diced
2 cups Yukon gold or new red potatoes peeled and diced (4-5)
2 cups sweet potatoes peeled and diced (1 large)
1 head of cauliflower
Optional 1 small onion chopped
2-3 tablespoons olive oil
Salt and pepper to taste
