Homemade Dry Onion Soup Mix

This is from my Crock Pot Pork Philly Cheese Steak Post. Thought it would be easier to find as a separate post.

Homemade Dry Onion Soup Mix:

Ingredients:

3/4 cup dried onion flakes

1/3 cup low-sodium beef bouillon granules

4 tsp onion powder

1/4 tsp parsley flakes

1/4 tsp celery seed

1/4 tsp paprika

1/8 tsp ground black pepper

1/8 tsp sugar
Directions:
Combine all ingredients and store in an airtight container
About 5 tablespoons of mix are equal to 1 1¼-ounce package
To make onion dip: Mix 5 tablespoons with one pint of sour cream.

Bacon Cheeseburger Soup

20150224_114431March is only four days away and the temperature this morning was “-19°” here in Southwest Ohio. The local school district, in their infinite wisdom, decided not to close or delay the start of school today. This despite the fact they we were closed everyday last week, including Thursday and Friday, when the morning temperature was a balmy -12°.

Maybe it’s the State mandated testing that needs to be completed this week and next. Don’t misunderstand me, I do not agree with “cold days”. The kids should have gone to school last Thursday and Friday. Our school board needs to figure out which criteria constitutes when it is too cold to have school. If it was cold enough Friday not to have school, why did they play the varsity basketball game that night. Go Figure!!   We are raising a bunch of wimps. But I digress….

This weather is perfect for soups and stews. There are many versions of cheeseburger soup on the web. In my version I try to lighten the recipe a little by using Kraft 2% Velveeta cheese, fat-free half & half, 1% milk and low-fat sour cream.

I love this soup and so do my kids. I like to add all of the condiments you would add to a regular cheeseburger. It amazing how close it tastes to a good old fashion grilled cheeseburger. Summer can’t get here quick enough. 25 days until spring.

Potato Leek Soup

www.dadwhats4dinner.comToday is a good day for soup here in the Midwest. The temps will be falling below zero before the end of the day with wind chills 15° to 25° below zero. The wind is howling outside my office window and the snow is blowing sideways. I guess I shouldn’t complain, our winter has been relatively mild compared to the New England states. They are bracing for their fourth blizzard in a row.

www.dadwhats4dinner.comI’ve had a bag russet potatoes that were begging to be made into soup. I love soup especially on a cold blustery day. I picked up a bunch of leeks earlier in the week, so a potato leek soup was my soup of choice this weekend.
